The big reason that most people discard leftover beef is because it doesn't taste good. That roast from last night might have been moist, juicy, and absolutely delicious, but once it's reheated it tastes dry, chewy and really not good. So what you need to do is cook your leftover beef in ways that are different then the original. So let me share these leftover beef recipes to get you started.
My personal favorite is chimichangas and who would say no to one. To make these you will cut the leftover beef (and it can be roast, steak or ground beef) into bite size pieces. Then put it into a medium size bowl with a little garlic powder, salt, pepper, a dash of cumin and half an onion. Add enough water to cover and let it simmer for 2-3 hours until the beef is tender.
Pull the meat out and shred in a bowl. Put some oil in a skillet and heat to 300, or hot enough that it sizzles when water is sprinkled on it. Place 2 Tbsp of meat in the center of a tortilla and roll folding over the edges. If needed secure with toothpick. Then put in oil and cook each side until brown, normally 2-3 minutes per side. Place in warm oven to keep warm while you cook the others. Then top with sour cream lettuce and tomatoes.
Leftover beef recipes come in all different shapes and sizes but what if you just want to have something quick and simple? Then that's easy.
For a really simple way to use that leftover beef make yourself some sandwiches. All you need to do is slice the meat as thin as you want and make a sandwich how you normally would, with lettuce, tomato and mayo.
You could also cut the leftover beef into cubes and make a stew with it. Just throw it in the crock pot with some flour, water, potatoes, and carrots. Season it with a little onion powder, garlic powder, a little oregano, salt and pepper to taste. Then let it slow cook for 6-8 hours and serve. You can throw this together on your way out the door and come home to a delicious stew for dinner.
