Cheesy Baked Chicken

As a mom, I'm always looking to stretch a dollar as far as it will go. As many know, meat isn't cheap. Fortunately there are lots of fillers you can add to make one small piece of meat into an entire meal for a whole family. Cooked or uncooked it doesn't matter with this particular recipe!

One of my favorite recipes that we've used in the past we call "Cheesy baked chicken". We used two small pieces of chicken that were left over from another package, and turned it into a full meal. Not only is it healthy, but it filled everyone up!

This recipe can also be used if you've already got a cooked chicken you need to use. Ours was not, so it does work either way. The only real difference between cooked and uncooked in this recipe is the cook time, and possible the temp depending on your preferences.

Cheesy Baked Chicken

What you'll need:
2 Skinless, Boneless Chicken Breasts
Can of Corn
Mushrooms
Velveeta Cheese
Butter
Garlic, diced

Directions:
The chicken used in this recipe was left over from a package I didn't fully use, so I added the rest of the ingredients and baked them all together for about 45mins at 425*. Eat and enjoy!

If the chicken is already cooked, you can cut that time in about half. There is also room to add other veggies and ingredients if you'd like.

The best thing about this recipe is it's so easy to add different ingredients to. If you have shredded cheese instead of Velveeta, give that a shot with a little bit of milk. Do you like green beans instead of corn? Go ahead and substitute! Leftover potatoes might be a nice addition as well, just as long as they are cooked if your chicken is cooked too.

To get really creative, you can also add other leftover meats such as roasts, pork chops, or other main dishes. Rice goes well with chicken as well, and might be a nice addition to this either in it or on the side.

If you've got raw chicken like we have and want more tender chicken, you can lower the temp a bit and increase the cook time. Just keep an eye on the other ingredients you've added, since you don't want them to get scorched.
