Leftover Thanksgiving Turkey Casserole

My grandmother is a firm believer of not wasting anything, especially food. The holidays are no exception. Every year she would buy a huge turkey and then complain when it was not completely eaten. We would eat turkey for the next three or four days because she refused to throw away perfectly good food she had taken so long to prepare.

One of her favorite dishes was Turkey Casserole. It is very easy to make and you can throw just about any leftovers in to make it a complete meal.

Gather some leftover turkey, veggies, a can of cream of chicken soup and some cooked rice. Mix all ingredients together in a large bowl. Add 1 cup of milk and some seasonings. Put into a casserole pan and bake at 350 degrees for about 30-40 minutes. If you like you can even top with leftover potato chips or cracker for some crunch.
