Lemon Chicken

Recipe for a Warm Winter Dish

If your looking for a way to liven up your chicken, surprise your family with an easy recipe that fits any budget.

1 chicken cut up, 1/2 cup chopped cooked bacon,1 1/2 cups chicken broth, 1/2 cup white wine (optional), 1 pound red potatoes boiled 7 min.then cut into slices,8 ripe tomatoes cut into quarters, 2 tsp.chopped fresh thyme, 1 garlic clove chopped fine, 2 tbs. grated lemon rind, 2 tbs.chopped parsly for garnish, lemon to squeeze juice over top of chicken dish, use a large flameproof cassarole dish for cooking.

Dry-fry chicken until brown, remove from dish, then add bacon cook until done, stir in broth and wine if using, return chicken to the mixture, put potatoes and tomatoes around the chicken pieces, sprinkle with thyme, garlic, lemon peel and seasoning, cover with lid or foil and cook at 350 for 45 min. until done, scatter parsly over the top, squeeze lemon juice all over the top, place lemon wedges around ckicken for garnish.

For desert, fresh fruit, honeydew melon cut into cubes and served with whip cream on top.

This is an easy recipe and if needed you can use thyme and parsly from your spice rack if you do not have it fresh, just as good and less expensive.
