Light, Airy Cookies that Would Be Perfect for a Tea Party

These Lemon Tea Cookies are small, delectable cookies with a fresh taste. The only work they require is to be dropped onto a cookie sheet and stuck in the oven after the dough is made. Preheat the oven to 350 degrees before you get started. This recipe makes about 48 delicious cookies.

Recipe:

1 teaspoon of lemon zest

2 teaspoons of freshly squeezed lemon juice

1/3 cup of milk

1/2 cup of butter (can use butter)

1 3/4 cups of flour

1 cup of sugar

1 egg

1 teaspoon of baking powder

1/4 teaspoon of baking soda

2 tablespoons of lemon juice (used in frosting along with the remaining sugar)

Stir the 2 teaspoons of lemon juice in with the milk, then let stand for 3-5 minutes. Place butter in large bowl and beat with mixer for about thirty seconds on high. Add half of the flour, 3/4 of a cup of sugar, the egg, the baking powder, the baking soda, lemon zest, and milk/lemon juice mixture. Beat with mixer until combined. Beat in the remaining flour.

Drop onto ungreased cookie sheet and bake at 350 degrees for nine to eleven minutes.

For the frosting, stir together the two tablespoons of lemon juice and the remaining sugar then brush on cookies after they have cooled down.
