Lemon Meringue Pie

Lemon Meringue Pie is one of my favorite pies. This recipe uses fresh lemons and it gives it a delicious lemon taste. One piece of this yummy pie calls you back for another one. This pie pairs with just about any meal.

Ingredients needed to make the Best Lemon Meringue Pie:
1 ½ cup sugar
1 ½ cup water
½ teaspoon salt
½ cup cornstarch
1/3 cup water
4 eggs, separated
½ cup lemon juice
3 tablespoons butter or margarine
1 teaspoon grated lemon rind
¼ teaspoon salt
½ cup sugar
1 baked 9-inch pie shell

Directions for making Best Lemon Meringue Pie:
Step 1: Combine 1 ½ cups sugar, 1 ½ cups water and ½ teaspoon salt in a medium saucepan; heat to boiling.
Step 2: Mix cornstarch and 1/3 cup water to make a smooth paste.
Step 3: Gradually add cornstarch paste to boiling mixture, stirring constantly.
Step 4: Cook until thick and clear. Remove from heat.
Step 5: Beat together egg yolks and lemon juice; stir into mixture. Return to heat.
Step 6: Cook mixture stirring constantly, until bubbles again. Remove from heat.
Step 7: Stir in butter and lemon rind.
Step 8: Cover; cool to lukewarm.
Step 9: Combine egg whites and ¼ teaspoon salt in bowl; beat until frothy.
Step 10: Gradually add ½ cup sugar, beating until glossy peaks form.
Step 11: Stir two rounded tablespoonfuls of meringue into lukewarm lemon filling.
Step 12: Pour mixture into baked pie shell.
Step 13: Top with remaining meringue, spreading evenly.
Step 14: Bake in 325 degree oven for 15 minutes or until lightly browned.
Step 15: This recipe makes 6 to 8 servings.

Tips:
I like to chill this pie before serving.
