Lemon Raspberry Thumbprint Cookies

This is a great cookie recipe. Here's how to make them.

Pre-heat oven to 350 degrees

Spray cookie sheet with cooking spray

You will need:

1 cup butter or margarine

1/2 cup sugar

2tbls water

1 egg separated

1tsp lemon extract

1tsp vanilla extract

2 cups flour

1/2 tsp baking powder

1 cup finely chopped nuts

non stick cooking spray

one jar raspberry preserves

powdered sugar

Sift together flour and baking powder and set aside.

Cream together butter, sugar, egg yolk, vanilla extract, lemon extract, water.

Slowly stir in flour mixture, making sure to mix well.

Shape into 1 1/2 inch balls.

Roll each ball into egg white and then into nuts.

Using a mellon baller or teaspoon, make a well in the center of each ball.

Fill each well with raspberry preserves.

Top preserves with finely chopped nuts.

Place in oven and bake for 10 minutes.

Spinkle with powdered sugar when cooled

You can add food coloring to the cookie dough for a more holiday look.

    I have never been a baker, but I am trying a few things in utter boldness! In fact...I just made my second apple pie tonight for my sweet husband! It sure came out better than my first! My daughter bakes and is so creative...I will share your recipe with her!
