Labor Day Picnic:
Picnic Chicken Recipe
(originally printed Taste of Home Magazine June/July 2007 pg 37)

Prep: 20 min.
Ingredients
3 eggs
3 tablespoons water
1-1/2 cups dry bread crumbs
2 teaspoons paprika
1 teaspoon salt
½ teaspoon each dried marjoram, thyme and rosemary, crushed
½ teaspoon pepper
1 cup melted butter
12 chicken drumsticks
12 bone-in chicken thighs
CREAMY LEEK DIP:
1 cup heavy whipping cream
1-1/2 cups plain yogurt
1 envelope leek soup mix
1 cup (4 ounces) shredded Colby cheese
Directions
In a shallow bowl, whisk eggs and water. In another shallow bowl, combine bread crumbs and seasonings. Divide butter between two 13-in. x 9-in. baking dishes.
Dip chicken pieces in egg mixture, then coat with crumb mixture. Place in prepared pans. Bake, uncovered, at 375° for 1 hour or until juices run clear, turning once. Cool for 30 minutes; refrigerate until chilled.
For dip, in a small bowl, beat cream until stiff peaks form. In another bowl, combine the yogurt, soup mix and cheese; fold in whipped cream. Cover and refrigerate until serving. Serve with cold chicken.
Tex-Mex black bean Wraps:

Ingredients:
1 (15 ounce) can black beans, rinsed
1/3 cup chunky salsa
1 green bell pepper, thinly sliced
1 tomato, thinly sliced
1 cup shredded Cheddar cheese
1/2 cup shredded Pepper Jack cheese
1 avocado
1/3 cup sour cream
1 teaspoon lemon juice
4 (8 inch) flour tortillas
Preparation:
In medium bowl, place black beans and mash with a fork. Leave some beans whole for a chunky texture. Add salsa and mix well. Prepare bell pepper, tomato, and cheeses.
In small bowl, mash avocado with sour cream and lemon juice.
Spread bean mixture over tortillas and top with vegetables and cheeses. Place some avocado mixture over cheeses. Roll up sandwiches and serve.
Cream Cheese Almond Bars

Preparation time: 1 hour
Cook time: 20 min.
Ingredients:
1 cup butter
2 cups flower
½ cup powdered sugar
8 ounces softened cream cheese
2 Eggs
½ cup sugar
1 teaspoon almond extract
Frosting
1/4 cup butter
1 ½ cups powdered sugar milk
1 teaspoon almond extract
Almond slivers for decoration
Preparations:
Combine butter, flour, and powdered sugar; beat until well blended.
Press into the bottom of a 9 x 13 cake pan. Bake for 20 minutes at 350 degrees.
Beat cream cheese until smooth. Add eggs, sugar, and almond extract. Beat until well blended.
Spread on top of the crust and bake for 15 to 20 minutes. Allow to cool.
FROSTING:
Combine butter, powdered sugar, and a small amount of milk; beat until smooth.
Add more milk if frosting is too thick to spread easily. If it is too thin, add a little more powdered sugar. Add almond extract.
Spread on top of bars and then sprinkle with sliced almonds.

Make Labor Day Bead Necklaces!

Help your child to cut the craft rope to length so it can be knotted closed and slides easily over their heads. Show them how to slide different colored beads over the string and ask them to tell you when they are almost filled up. Then give them the beads and tell them to make a pretty Labor Day Bead Necklace for everyone to wear during your festivities or dinner.
Let them create their own little designs and be sure to "uhh and ahh" appropriately.
