Ingredients

Serves 10
1 - packet fruit flavor Jello gelatin (or similar brand)
1 - 16 oz. container small-curd cottage cheese
1 - 16 oz. container Cool Whip (any variety, low fat, low sugar, etc.)
1/2 - cup fresh berries, or fruit, cut into bite-sized pieces OR
1 - 4 oz. can Mandarin oranges, or fruit cocktail (juice drained off and held at the side)

Directions for Light and Fluffy Make-Ahead Easter Fruit Salad

In a large mixing bowl, thoroughly combine the Jello gelatin granules from only one packet, into the cottage cheese (coloring will take place as these items are mixed together). Add the fresh fruits (or drained canned fruit) mixing thoroughly. Then add the entire Cool Whip container (less one scoop) folding it into the fruit and cottage cheese mixture.

Transfer the entire contents from the mixing bowl into an Easter or holiday-theme mold or serving dish, adding the one held-back scoop of Cool Whip on top. Refrigerate for at least one hour, or overnight, to set up.

Serve cold, straight from the refrigerator. Decorating with colorful berries or fruits on top or around the edge would be entirely optional.

Please note: pour drained-off canned fruit juices over holiday poultry, roast, or ham for an excellent cooking stock, or sweetened marinade. And do NOT add any water to the Jello.
Tip
This delightfully sweet, fruit salad/side dish is almost as good as dessert. You would never expect this fluffy, pastel-color Easter dish to contain a whopping 14 grams of protein per serving, and your kids will request it all year long. This colorful high-protein fruit salad can be served in any Easter-theme serving dish or mold, such as a bunny or egg-shape, to brighten your holiday dinner table, or patio buffet brunch. Just watch your family devour this light-and-fluffy fruit salad, with melt-in-your-mouth flavors.
