14 oz can of artichoke hearts, chopped
1 small can of water chestnuts
1 can of low sodium/low fat cream of celery soup
1 cup of fat free cream cheese
1/2 cup each of fat free Parmesan & shredded mozzarella cheeses
1/2 cup each of chopped/or minced onion (minced are very potent) and roasted red peppers. I use fresh green peppers a lot also.
1 or 2 cloves of crushed fresh garlic. Depending on your taste
Salt
Pepper
Crushed red pepper to taste
Vegetable cooking spray
In medium bowl, combine all except veg. spray (!). Spread this into a ,now use the spray, greased 2 qt. baking dish.
Cover and bake at 400 degrees for about 20 minutes. It should bubble when done. Serve warm or hot. Its good!
