If you crave lobster, but are looking for something more to do with it than just boil it, this is for you. Lobster is by far my favorite meal. Here are a few recipes that you can make using the scrumptious seafood.

Butter Fried Lobster

1-2 lbs lobster meat

1/4 teaspoon oregano

Paprika

Olives (of your choice)

½ stick butter

2 tablespoons cooking sherry

Salt and pepper to taste

Cut lobster into about 1" cubes. Melt butter in frying pan and add lobster and oregano. Simmer and cover for 5 minutes. Remove top and cook on high for 5 more minutes.

Remove lobster and place on plate. In pan add sherry, salt and pepper. Boil for 1-2 minutes and pour over lobster. Garnish with olives, dash of paprika and serve.

Lobster Ragout

1lbs lobster meat cooked

Dash cayenne pepper

Dash of white pepper

4 slices of buttered toast

2 lbs thick cream

1 teaspoon white vinegar

3 oz butter

Lemon wedges

Salt to taste

In mixing bowl blend peppers, salt, cream, vinegar and lobster. Stir well. Melt butter and add lobster mixture. Simmer for 5 minutes and serve over toast with lemon wedges.

Lobster and Crab Patties

1 cup lobster meat

1 cup crab meat

4 oz butter

1 tablespoon flour

1 cup milk

1 tablespoon lemon juice

1 egg

Salt & pepper to taste

Dash nutmeg

1 cup cracker crumbs

6 tablespoons peanut oil

Tarter sauce

Cut meat into cubes and melt butter in saucepan. Add flour, salt, nutmeg and pepper. Blend well and gradually add milk until thickened. Add lemon juice, stir well and add meats.

Remove from heat and chill in refrigerator for 10 minutes. Shape into patties, roll into crackers, dip in beaten egg and in crackers again.

Heat peanut oil until hot. Fry patties for 5 minutes and drain on paper towel. Serve with tartar sauce.
