A friend of mine, who used to work at Lou Malnati's, says the new location won't be open until sometime in the summer, and judging by the way it looks, she might be right. Although there is a sign in the window saying that the restaurant will be coming soon, there's no hint of a date on it.
Last summer when the Anthropologie store left the area, there was speculation on what would be going in to their old space, and I even heard that a clothing boutique would go in. Lou Malnati's has the most delectable deep dish pizza, with its flaky and buttery crust. The thin pizza is good too, because what really makes the pizza, along with the crust, is the tomato sauce, which is on the sweet side, and has small pieces of real tomato in it.
Lou Malnati's also has a restaurant in the River North neighborhood, but for me, the State Street location will be more convenient. I probably could eat Lou's pizza and salad every day for lunch, and since the new location will be so close, I just might.
