Here's the recipe:
1 lb of extra lean ground beef
1 box of Stove Top Stuffing-Savory Herb
2 egg whites
1 C water
Preheat oven to 350 degrees. Prepare muffin tin with Pam cooking spray. Mix all the ingredients together well in a bowl. Fill each muffin cup approximately half full with the mixture. Bake for 25-35 minutes, until done.
Approximately 100 calories and 2 grams of fat per "cake".
The ground beef can be substituted with ground turkey or ground chicken. You can also top with ketchup if you like that.
Now, here is my review of this entree. The first thing that I thought about this recipe that it is soeasy! I whipped it together in about 10 minutes! It was fun to get my hands in there and mix it all up! Even scooping it into the cups was fun!
My impression upon seeing the cooked product...I thought it looked a little dry, but that's OK. I may have cooked it a bit too long. I was disappointed with how difficult it was to get the meatloaf out of the muffin tin. It got stuck in some places and didn't come out as pretty as I would've liked it to. I made a double batch and put the leftover mixture into a loaf pan like a traditional meatloaf, so I'm hoping that will come out better. The thing I love about the muffin tin idea is that it's already portioned out for you! I have a very difficult time with portion sizes.
Now onto the taste. You can definitely taste the Stove Top in it, which is fine with me, because I love stuffing! The outsides of the "cupcake" were kinda dry and the inside was nice and moist. They were good....but not as fabulous as I had hoped. I will definitely make them again!
Overall, I would give this treat 3 1/2 tiaras out of 5 on the Amy Gayle Scale.
