Low Calorie Desserts for Summer

Two Guilt-Free Sorbets

Rachel de Carlos
A refreshing, guilt-free sorbet can take the place of high calorie ice cream. Here are two very low calorie sorbets to quench your cravings.

Green Tea Sorbet

This couldn't be easier!

Ingredients

  • 1 bottle of diet green tea (I used diet Lipton Citrus flavor green tea)

If you have an electric ice cream freezer, pour the tea in and let it go to work.

If you don't have an ice cream freezer, pour the tea into a bowl and freeze for 1 - 1 ½ hours, or until there is about a 2 inch ring of ice around the edge. Push the frozen parts into the middle and let freeze for another 30 minutes or so and repeat. Disturbing the tea while it's freezing will keep it from turning into one big solid ice cube.

When the mixture is very slushy, mash it or use an electric mixer to keep it from becoming a solid block. If you forget, or your tea gets too solid, just let it thaw a little, break it into chunks, mash and return to the freezer until it reaches a scoopable consistency. When you're able to scoop out round or oval balls with an ice cream scooper, it's ready to serve.

To have individual servings made up ahead of time, put several small scoops into serving bowls and keep in the freezer until needed. Garnish with a lemon slice and it's ready to enjoy!

Fresh Fruit Sorbet

Strawberries, blueberries, and mango all work really well, but almost any juicy fruit will make a delicious sorbet using this recipe.

Ingredients

  • 2 cups carbonated sugar-free lemon-lime drink (I used diet 7-Up)
  • 1 cup fresh strawberries

Pour the lemon-lime drink into a flat, shallow pan. Place in the freezer and freeze until it's a solid block.

Remove from freezer and scrape the frozen drink with spoon or fork until it's a slushy consistency.

Gently puree the fruit so there are still some lumps, add to the slushy drink mixture, cover and return to the freezer.

When sorbet is firm, scoop small balls into individual serving bowls, garnish with the same fruit you used in the sorbet, and serve.

Calories in entire recipe: 74

  • Fresh strawberry sorbet with less than 20 calories per serving
  • Green tea sorbet with no calories
Sorbets are refreshing and lower in calories than ice cream, especially when made with low calorie ingredients.

I'm not so sure about the green tea sorbet. I prefer a steaming cup of tea rather than anything other than hot! But the fresh fruit sorbet sounds more like the sort of thing I would enjoy!
