Low Carb Atkins-Friendly Mexican Chili Verde

Quick, Easy, Low Carb and Low Calorie

This Mexican Chili Verde is tasty and easy to fix. Great for Atkins or any other healthy diet. Great for holiday parties and potlucks!

Ingredients:

Cheapest pork roast available cut into 1-2 inch pieces (approx. 3-4 lbs.)

1 can of any beef or pork broth

1 large can or jar of chili verde sauce (found in most regular markets)

Onion as desired (optional)

1 jar of any variety of green salsa, hot or mild

1 tbsp. chili powder

Salt and pepper to taste

Brown pork in frying pan. Put into crock pot or top of stove stew pot.

Add broth, salt and pepper, chili powder, and onion. Slow cook 4 hours or simmer 2 hours.

Add chili verde sauce and green salsa. Simmer another hour on low.

Approximate carbs for 1 cup serving = 3

If you are on the Atkins Diet this is excellent for stage 1 and 2 on a bed of lettuce. Add some cheese on top if desired. Later use low Atkins or other low carb tortillas and make burritos with lots of cheese, lettuce, and onion.
