Flax meal makes a wonderful coating in many recipes, and this is no exception. It becomes crispy and delicious after baking.
Expect to use only half of the cheese and broccoli mixture when stuffing the chicken breasts. Serve the rest over the top of each serving, as a dipping sauce, or as a base for a vegetable side dish. The carb counts I have provided include one prepared chicken breast and one sixth of the remaining sauce.
I have only one complaint about this delectable recipe. When refrigerated, the breasts loose their crisp coating. It becomes soft and sometimes slides off of the meat. For this reason, I recommend serving a dinner party of six and eliminating leftovers. You may also decide to scale the recipe down to fit your needs.
Chicken Kiev
6 boneless, skinless chicken breasts
1 bunch broccoli, florets only (1.5 to 2 cups)
1.5 cups cheddar cheese, shredded
1/2 cup heavy cream
2 T butter
1 egg
Flax meal
Salt and pepper
Preheat the oven to 425 degrees. Butterfly the chicken and flatten.Refridgerate until you're ready for them. Put the broccoli on in a pot of water and boil until done. Mix the egg and half the cream; beat well. Refridgerate. Mix the rest of the cream, the butter and the cheese in a saucepan. Salt and pepper, and cook, stirring constantly, until it becomes a sauce. By now, the broccoli should be done. Drain it, slightly mash, and add the cheese sauce. Mix some flax meal with salt and pepper in a bowl. Grease a 9x13 or larger glass pan. Dip the bottom (not the cut) side of the chicken in the egg-cream, then "bread" it with the flax. Lay the chicken in the pan, flax side down. Top with a spoon of broccoli-cheese sauce and fold it over. Repeat until all of the chicken is done, making more flax mixture as needed. Sprinkle the remaining flax over the top of the chicken. Bake one hour or until chicken is completely cooked through. Serve with the remaining broccoli-cheese sauce. Serves 6.
