1 cup diced chicken breast
1 cup sour cream
2 cups grated cheese
1 teaspoon cumin
4 low carb tortillas
Directions for Low Carb Chicken & Sour Cream Enchiladas

Preheat oven to 400 degrees and place chicken breast on cookie sheet or pan. Bake for 30 minutes. Take chicken breast out of oven and turn temperature down to 350 degrees. Dice chicken breast.2
Mix 1/2 cup sour cream, 1/2 cup grated cheese of your choice, cumin and 1 cup diced chicken breast in a bowl. Spray casserole dish with cooking spray. Spoon mixture into tortillas and wrap. Place in casserole dish. Cover. Bake for 30 minutes.3
Take casserole out of oven and top with rest of the cheese. Bake for an additional 5 minutes. Serve with sour cream.- Atkins Diet Friendly, Low Carb Chicken Enchiladas!
