S'Meringue Cookies are best served fresh from the oven. But you can enjoy leftover meringues later... if there are any! When adding the toppings, be sure to leave some of the meringue uncovered to make it easier to determine when they're done. For a change of pace, try combining natural peanut butter with sucralose sweetener for an equally delicious topping.
Watergate salad is an old favorite from my childhood. Making it a low carb dish was a labor of love. We enjoy it on holidays and other celebrations. If there's a difference between the sweet flavor of this recipe and the traditional, sugar-laden dessert, my husband hasn't noticed.
Remember that controlled carb living isn't only about tender steaks and crisp steamed vegetables. It's also about delicious treats that can be shared with the whole family.
S'Meringue Cookies
Ingredients:
2 egg whites
1 tsp vanilla
1/2 c granular sucralose sweetener
1 T melted butter
1/4 c milled flax seed
5 packets sucralose sweetener
Ground cinnamon
5 mini sugar free dark chocolate bars
Preheat the oven to 300 degrees. Line a baking sheet with parchment paper.
Combine the egg whites, vanilla and 1/2 c granular sweetener in a bowl and beat with an electric mixer until stiff. Set aside. In a small bowl, melt the butter. Add the flax, sweetener packets, and cinnamon to taste. Mix well. Set aside. Chop each mini chocolate bar into 6 pieces. Set aside.
Drop meringue by spoonfuls onto the parchment-lined baking sheet. It will make about 15 mounds. Tuck 2 chocolate chunks into each meringue. Sprinkle with flax crumbs.
Bake 15 to 20 minutes, or until the tops of the meringue are lightly browned. Cool and remove from the paper.
Per S'Meringue: 16 calories, 2.6 g carbs, 1 g net carbs
Low Carb Watergate Salad
1 package sugar-free pistachio pudding mix
2 c cream, divided
1 c water
Dash vanilla
1/3 c pecans
Prepare pudding mix, using 1 c cream and 1 c water in place of milk. Refridgerate to set. Whip remaining cream with a dash of vanilla. When the pudding is set, fold it and the nuts into the whipped cream. Refrigerate until serving. Serves 12.
Per Serving: 3 g carbs, 3 g total carbs, 160 calories.
