You can also add other low carb items like salmon or tuna when you are mixing the eggs. Plan to make enough eggs for a few meals and separate the yolk mix to flavor differently for variety.

Egg muffins can be a main course item for your lunch of dinner meal. The muffins can contain vegetables or meats making them a more filling choice for your low carb meal plan. You can use this core recipe to make your muffins and fit them to your own likes with the fillings used.
Egg Muffins
12 eggs
2cups whipping cream,
2 cups shredded cheese
2 cups of any cooked meat or vegetable
This makes 12 large muffins.
Mix the ingredients, and pour into muffin tins.
Bake at 325 for 20 minutes.
If you don't eat these all for the first meal you can refrigerate and reheat in the microwave. You can also use one cup meat and one cup low carb vegetable for variety.

Picante Egg Casserole
1 Cup Picante Sauce
1 Dozen eggs
4 cups shredded cheese, any variety
2 Cups Sour cream
Spread picante sauce in lightly greased 9X13 dish
Top sauce with cheeses.
Mix eggs and sour cream in a blender
Pour over the cheeses
Bake at 375 degrees for 30 to 40 minutes. Casserole should be lightly brown.
Serves 12 with 4 carbs per serving
