Low Carb Spicy Thousand Island Dressing

While low carb diets often get misconstrued in the media as the "all meat diet", people who have been successful with the diet long term know that the real secret to maintaining a low carb lifestyle is to get plenty of the right kind of veggies. There's no better way for low carbbers to get their vegetable servings than with a good salad. Salads provide tons of nutrients for very little cost in your carb counts and the key to a really good salad is a really good dressing.

This recipe is a low carb take on the classic Thousand Island Dressing, a low carb no-no. It utilizes Sriracha Thai Chili Sauce in place of the ketchup, which provides a slight kick not found in standard Thousand Island. Sriracha can be found in the Asian food section of most supermarkets and in international grocery stores.

Ingredients:

32 ounce jar of mayonnaise (do not use light mayonnaise as this adds carbs)

2 tbsp. of sriracha

16 oz. jar of No Sugar Added Sweet Relish, not drained

Directions:

Mix all ingredients together in a mixer or with a spatula. If the mixture is thicker than you prefer, add a tbsp. of olive oil and mix again.

This recipe makes approximately 32 servings at 2 carbs per serving.
