Low-Carb Meatballs

Who says meatballs have to have breadcrumbs? These are so simple and delicious. The flax coating gives them a crispy crust that is reminiscent of breadcrumbs without the carbs.

I like these with a simple, tangy dipping sauce made of ketchup and Worcestershire sauce, mixed to taste. They're also tasty with horseradish mustard or low carb barbecue sauce.

One of the biggest virtues of this recipe is that it gets its savory flavor from the sausage. You can adjust the taste to fit whatever recipe you're looking for by using Italian, maple, spicy or other sausage. The number and size of your meatballs determines your cooking time. Keep an eye on them to prevent burning and ensure that they cook completely.

1 lb pork sausage
1-1 and 1/2 lb ground beef (I think I used 1 and 1/2 lb)
1 T minced fresh onion
Flax meal

Preheat oven to 375 degrees.

Sprinkle some flax meal on a plate. Mix the first three ingredients by hand in a big bowl. Use a spoon to scoop out a portion big enough for a meatball. Roll it in your hands, then roll it in the flax.Arrange on a baking sheet and bake until cooked completely through. Serves 4 hungry carnivores.
