Low-Cost Vegetarian Recipes for Thanksgiving

This is the season for calling friends or relatives and enjoying with them by serving Thanksgiving recipes. Petha (Sweet dish) can be prepared with low-cost.

Utensils

Following Utensils are required: Sharp Knife, Shallow pan, Steel fork, Muslin cloth, serving plate, dry jars, and vessel.

Ingredients
1 kg candied ash gourd
1 kg sugar
50 grams Lime
5 grams Alum
100 to 150 grams milk
Rose essence

Procedure
Cut the candied ash gourd into 5 to 6 pieces and remove the seeds and other portions. Take the weight of the pieces . Prick thoroughly the pieces by steel fork. Put these pieces in to Lime water and keep it for 3 to 4 hours.

Remove the pieces from lime and wash it thoroughly and boil it in a vessel with plenty of water. Add Alum to it and boil it for 10 minutes . Remove it from the gas and wash the pieces thoroughly under running water.

Take 1 kg sugar and add equal amount of water and boil it. Slowly add little amount of milk and keep on stirring and remove the scum . Keep on stirring till syrup turns white, remove and stain with a muslin cloth.

Then add the cut pieces in the stained syrup and keep it boiling for another 10 minutes . Remove it and keep it aside for one night.

Next day remove these pieces from the syrup and boil this syrup for some time. The syrup should be thickened, remove it from gas and add these cut pieces again in to it and keep for another night.

Next day boil again with the syrup and go on stirring, till it is dry, remove from fire and transfer it in to tray . Now separate the pieces from syrup and allow it to cool.

Finally sprinkle some Rose essence over the pieces and keep it in clean and dry Jars.

    Excellent topic! I prefer eating vegetarian on Thanksgiving. This sounds really different.
