Low-Fat Fruity Christmas Pizza
Ingredients:
Sugar cookie dough (either homemade or out of the refrigerator section at the store)
8 oz package of low-fat/fat-free cream cheese or ricotta cheese (at room temperature)
1 bag of powdered sugar
Kiwi fruit
Strawberries
Blueberries and raspberries (optional)
Red and green food coloring (optional)
Preparation:
Arrange sugar cookie dough in a continuous (do not make it into individual cookies) circle on a round pizza pan (you can also mix in a drop of red or green food coloring into the dough and mix it in thoroughly)
Bake according to package directions
Mix the entire bag of powdered sugar with the cream cheese or ricotta cheese and mix thoroughly (add a drop or two of red or green food coloring...whichever you did not use in the cookie dough...and mix thoroughly)
Let the sugar cookie cool completely
Spread the cream or ricotta cheese mixture on the cool cookie
Begin at the edge of the cookie and place the kiwi fruit around the entire edge
Follow with the strawberries all the way around the cookie
Then put the blueberries and raspberries alternately around the cookie
Continue with this pattern until you have completely covered the cookie
For a bow at the top use either strawberries or raspberries or even blueberries in the shape of a bow
This can be served as is or with homemade whipped topping which is just whipping cream and sugar whipped thoroughly. Or serve with cool whip or store bought whipped topping. You can also drizzle dark or white chocolate over the entire cookie or have some melted chocolate for each individual to apply it themselves. This can also be served with low-fat or fat-free frozen yogurt.
The presentation is simply the "pizza" itself. Make sure not to cut it until everyone has seen it. They are beautiful if you take your time with them.
