SEVEN-LAYER MEXICAN DIP
1 c. fat-free sour cream
2 T. taco seasoning
9 oz. fat-free bean dip
6 oz. guacamole (3/4 cup)
1/4 c. low-fat cheddar cheese
1/2 c. onion, chopped
1 sm. tomato, chopped
6 med. black olives, sliced
Combine sour cream and taco seasoning. Spread bean dip on bottom of 12-inch round glass serving bowl or edged platter. Top with guacamole, sour cream, cheese, onion, tomatoes, and olives.
**1/4 c. per serving=1 point
CARAMEL KIX BALLS
5 c. Kix cereal
2 T. water
5 1/2 servings Kraft caramels
Measure cereal into large bowl. Microwave caramels and water in medium bowl, uncovered on HIGH for 2-3 minutes, thoroughly stirring every 2 minutes, until melted and smooth. Pour over cereal and gently stir until well coated. Drop into 12 balls on waxed paper.
**2 points per ball
CHOCOLATE MUFFINS
Chocolate cake mix
15 oz. can of pumpkin
1 c. water
Mix all ingredients in mixing bowl. Pour into lined or greased muffin tins. Bake at 375 degrees for 20 minutes. Yield: 24 muffins WW points=2 points for 1 muffin
**VARIATIONS: Can use spice cake mix instead
Can also use mini muffin pan and make bite size muffins for 1 point per muffin! Great for kids' snacks!
Also right after taking it out of the oven, can put one or two chocolate or peanut butter chips to melt! (Doing this will increase calorie intake)
GOOEY CINNAMON ROLLS
7 1/2 oz. refrigerated buttermilk biscuits
1 1/2 tsp. ground cinnamon
1 c. mini marshmallows
1/4 c. Splenda
Preheat oven to 400 degrees. Spray 10 wells of muffin pan. Separate biscuits and flatten each into 4 inch circles. Combine cinnamon and Splenda in small bowl. Dip each biscuit into mixture. Place 4 marshmallows in center of each biscuit. Bring edges up to form balls. Place each in prepared muffin well, seam-side down. bake for 8 to 10 minutes. Remove rolls from pan immediately and cool slightly on wire rack.
WW= 1 point per serving
NACHO CHICKEN
3 chicken breasts
2 c. uncooked instant rice
1 can Healthy Request cream of chicken soup
1 can Healthy Request cream of celery soup
1 can nacho cheese soup
Preheat oven to 350 degrees. Mix ingredients; put in greased 9x13 inch pan. Bake 45 minutes to 1 hour. Yield: 8 servings
