Ending the Stress of Figuring Out the Mid Day Meal...

V. L. Hamlin
I don't know about you, but every day when it nears lunch time I start to go crazy trying to figure out what my daughter and I are going to eat. When you go to a restaurant for your mid day meal, it is so much easier to choose, you don't have to prepare it, cook it or clean up from it. But at home, making the decision of what to have for lunch is not only time consuming, but nerve wracking. Below I've listed five great lunch ideas for moms who stay home with their children or women who work from home.

Lunch Idea # 1 ~ Leftovers

Leftovers from a favorite dinner can be a great way to make lunch quickly and easily. Especially if you make Lasagna or some other sort of casserole. Scoop it into a pot on the stove and warm it up, then eat it on paper plates! Easy clean up with less than five dishes to wash!

Lunch Idea # 2 ~ English Muffin or Bagel Pizzas

When you are grocery shopping, be sure to add the following three ingredients to your list: English Muffins, a jar of Pizza Sauce and Shredded Mozzarella Cheese. This is a sure way to get your child "into" eating lunch!

Lunch Idea # 3 ~ Pasta Salad

My five year old has memorized the recipe to my pasta salad. Children absolutely love it, all pasta salad has their favorite ingredient - Macaroni! Add some canned chicken or tuna and some chopped vegetables to add color and nutrients!

Lunch Idea # 4 ~ Sliced Fruit and Dipping Sauce

Cut up some apples, strawberries, watermelon or any other fruit you have around and make up this sweet confection for your children to dip their fruit in...

1 - 8 ounce package of cream cheese, room temperature

1 - 12 ounce jar of Fluff

1 - Tablespoon of Orange Juice

3-4 drops Food Coloring of your Choice

Stir until well blended, chill and serve with the fruit.

Lunch Idea # 5 ~ The old favorite....Peanut Butter & Jelly

It will never end, children everywhere love peanut butter and jelly and it seems they always will. Make it fun, by using different kinds of bread, cut the sandwich with fun cookie cutters to make shapes or favorite characters.

There you have it! Five awesome lunch ideas for the Stay at home Mom. Alternate each of them with different fruits and vegetables and you have a different lunch every day of the week! No more stressing at eleven o'clock every morning!
