Magical Muffins from the Microwave: Healthy, Delicious and Economical

Use Magical Muffins as Dessert or Instead of Expensive Bars

Magical Muffins begin with a basic microwave oatmeal muffin recipe.

Ingredients:

2 eggs

½ c. brown sugar

½ c Olive or Canola Oil

½ c. buttermilk, plain yogurt or sour milk

1 c. whole wheat flour

2/3 c. quick cooking oatmeal

1 tsp baking powder

½ tsp soda

½ tsp salt

Use a fork or whisk to mix eggs, sugar, oil and buttermilk. Stir in remaining ingredients. Add 1 cup Magical Breakfast, thawed. You need to read my article called

Best Healthy Breakfast: Four Supercharged Foods in One Bowl to learn how to get Magical Breakfast. Batter should drop from spoon in glops. If it doesn't, add a bit more water. If it's runny, add a bit more flour. I bake in Llorente muffin cups (see paragraph below) which are rather large; I fill them ½ to ¾ full. Recipe makes about 16 muffins.

Sometimes you can find it on eBay. It's worth the cost, is indestructible and a snap to clean. I wish I had the six cup muffin pan but I ordered a set 8 or 10 years ago and got 2 four cup muffin pans free. They're my most used pieces. The muffin cups on my pans are deeper than most so I don't fill them full with batter because I don't want such big muffins.

Here's some ways to enjoy your Magical Muffins:

For a yummy dessert microwave muffin and top with vanilla yogurt. (If you read my Magical Breakfast article you know all about super tasty vanilla yogurt brands.)

Microwave a muffin about 10 seconds, just thawed enough to stuff with 5 dark chocolate chips which you can read about and find where to purchase in my Easy Healthy Homemade Trail Mix article. Continue microwaving muffin until completely warm.

Always wrap muffins in microwave safe plastic wrap. Then you can take them on a trip and let them thaw naturally. Or you can microwave one in the wrap and eat it in the car on the way to work or give them to the kids on the way to school.

Variations to love: add a bit of cinnamon, organic raisins, dried cranberries or whatever you love. To entice the kids top with M&Ms or butterscotch drops or whatever they love.

    Hi there. I think your muffin recipes are great. However, has anyone heard of MAGICAL Muffin Mix. It came in a styrofoam cup and all you had to do was add water and microwave. They were made for diabetics. Does anyone know where I can get these muffins?

    I had never actually heard of that bakeware... I love to bake, but I don't make time to do it as much as I used to. You might have just motivated me!
