Granted, they may be somewhat limited in terms of word choice; however, you can easily create new words by combining the vocabulary you're given. For example, many of the kits include the preposition "to." Combined with the individual letter "y," you have "toy." You can also cover part of a word with a second word, combining the two to form an entirely new one.
Just as with poetry on the written page, magnetic poetry is not necessarily required to conform to any rules. Grammar does not necessarily have to be correct; the poems don't necessarily even have to mean anything! And interestingly, the kits can appeal to kids or adults...you can create entirely different themes using the same set of words. That said, here are some samples, created using two Magnetic Poetry kits combined:
