Make a Diabetic Turkey Breast in a Crockpot

Makes 12 servings
Ideal slow cooker size 6-7 quart
6 lb. turkey breast, skin and visible fat removed
2 tsp. oil
salt and pepper to taste
1 medium onion, quartered
4 garlic cloves, peeled
1/2 cup water
1. Rince turkey and pat dry with paper towels.
2. rub oil over turkey.
sprinkle with salt and pepper.
place, meaty side up, in large slow cooker.
3. Place onion and garlic around sides of cooker.
4. Cover. cook on low 9-10 hours, or until meat thermometer stuck in meaty part of breast registers 170 degrees.
5. Remove from slow cooker and let stand 10 minutes before slicing.
6. Serve with mashed potatoes, cranberry sauce, and a vegetable.

VARIATIONS
1. add carrot chunks and chopped celery to step 3 to add more flavor to the turkey broth.
2. Reserve broth for soups, or thicken with flour and water to make a paste for gravy.

You can debone turkey and freeze in pint size containers for future use, or freeze any leftovers. Turkey is very low in fat and sugar great for watching your diet.
