Make Your Own Frozen Breakfasts for Kids

My daughter and son both love pancakes and waffles. They want them every single day for breakfast and due to my busy schedule, I can't always whip them up fresh each morning. At first, I found myself buying frozen Aunt Jemina pancakes and Eggo Waffles, but then I decided there had to be a healthier way! I began to make my own homemade frozen waffles and pancakes. It has been a real time-saver for our family, and I feel better feeding these to my children because I know exactly what ingredients were used. They are preservative free and that makes me feel better!

In our house, I usually take one weekend day and make a big batch of pancakes or waffles. I often make whole wheat pancakes and waffles from scratch. Many weeks, I will add a fresh fruit to the batter and have occasionally created a chocolate chip batter. I prepare the batter as you normally would and could the pancakes and or waffles.

Next, I let the pancakes and waffles completely cool. When they are cooled, I place them on cookie sheets lined with wax paper. I place each waffle and pancake on the sheet, making sure they do not touch each other. If they touch each other, it will cause problems with them sticking together. Once they are spread out on the cookie sheets, I place them in the freezer for about an hour.

Once the pancakes and waffles are slightly frozen and hard, you can then transfer them into a Tupperware container, wrap them in foil, or place them in a freezer bag. Because the pancakes and waffles are in this partially frozen state, they will not stick to each other at this point. You can feel free to stack them high and layer them as you put them in the freezer.

For our home, this little bit of prep pays off. As I can quickly grab a few waffles or pancakes, pop them in the microwave and heat them up for my children. They really are tasty and you'll be able to tell the difference in taste between them and the pre-packaged frozen kind. The homemade frozen ones are really yummy! Because the pancakes and waffles are already cooked, I have extra time in the morning to chop up some fresh fruit to put on top of them, or use some cookie cutters to cut the pancakes into a fun shape.

The next time you are supermarket shopping and are considering buying frozen waffles or pancakes, consider making your own. You'll know exactly what goes into them, and it will save you some money too!
