Make Your Own Strawberry Ice Cream

With strawberry season upon us, what better way to cool down during the hot summer than with homemade strawberry ice cream? It only takes ten minutes to make, and in addition to being a sweet treat, strawberries are packed full of nutrients. Just one cup of strawberries provides 140 percent of your daily vitamin C, and they contain ellagic acid, which, according to A 2 Z of Health, Beauty and Fitness, "acts as a scavenger to 'bind' cancer-causing chemicals, making them inactive."

For fresh, local strawberries, don't forget to check out your local farmer's market. There are farmer's markets all over the country, and they offer fresh, organic food, as well as a friendly atmosphere. To find the nearest farmer's market to you, check out farmersmarket.com.

Ingredients:

• 1 pound frozen strawberries
• 1 cup Greek yogurt
• ¼ cup sugar
• ½ teaspoon vanilla extract
• strawberries, for garnish

Directions:

1. Chop up one cup of frozen strawberries, either by hand or in a food processor. Place strawberries in to a large bowl.

2. Puree the rest of the strawberries as well as the yogurt, sugar, and vanilla in a food processor.

3. Mix puree with chopped up strawberries.

4. Freeze for one hour, and then garnish with strawberries. Serves seven.

Interesting Fact:

Greek yogurt is considered to be healthier than regular yogurt because there is less sugar and more protein. Texture wise, Greek yogurt is thicker and richer than regular yogurt.
