Make a Sweet Dream Birthday Cake

misty21
My granddaughter's birthday just passed, and I baked the cake for her party. Shelly loved her cake, as did everyone else at the party. I wanted to make her a special cake and racked my brain to come up with something colorful and tasty. I decided on a strawberry cake with pistachio frosting. I also topped it with some maraschino cherries, and decorated the cake. I baked a sheet cake, but it can be made as a two-layer cake as well. Instead of ice cream, I decided to make chocolate milkshakes, which went very well with the cake, everyone thought it was a wonderful change from plain old ice cream, and it was fun to eat cake and sip on a thick, frosty cold milkshake.

I used Betty Crocker Super Moist cake mix, Pistachio pudding and Dream Whip. Here is the recipe.

1 box cake mix ( any brand or flavor)
1 box instant pudding ( any flavor)
1 box Dream Whip topping mix
4 eggs
1 cup cold water

Pre-heat oven to 350
Mix cake mix, dream whip, eggs an 1 cup of cold water in a large bowl with electric mixer on low speed till moist, then beat on medium for 4 minutes. Pour it into greased and lightly floured pan (bottom only).
Bake 30 minutes. Cool the cake. Meanwhile you can start to make the frosting.

Fluffy frosting: Beat 1-1/2 cups cold milk, 1 envelope Dream Whip and 1 package instant pudding. In a large bowl with an electric mixer on low speed mix until blended, then beat on high speed 4 to 6 minutes or until mixture forms soft peaks. It makes about 3 cups of frosting, and it should frost 2 (8-or9-inch) layers or 13x9 inch cake.

Store cake in the refrigerator. Makes 10 servings.

You can decorate the cakes as desired. This is a great cake for any occasion. You can turn it into a Birthday cake, Valentines Day cake, Anniversary Day cake, baby shower cake. I imagine you could even create really great cupcakes for any holiday as well. The possibilities are endless, and the flavor combinations are as well, be creative, have fun and enjoy! I can't wait for another special occasion to bake a "Sweet Dreamy Cake". I also plan on making this cake for my residents at the retirement home that I work at. I just haven't decided on the flavor combination yet. This cake will just melt in your mouth and you will find yourself going back for seconds.
