Make-Ahead Breakfast

Easy Breakfast Casserole

For many years we've had this for breakfast on Christmas morning. My oldest granddaughter always wants it, and now that she's grown up and married, she makes it to take to work at Christmas.

Recipe:

1 lb. sausage

2 slices of bread, cut into 1/2 in. cubes

6 eggs

2 cups milk

1 tsp. salt

Black pepper, if desired

1/2 tsp. dry mustard (can use regular mustard)

1 cup shredded cheddar cheese

Brown sausage, breaking it up into very small pieces. Drain. Rinse in a strainer to remove as much fat as possible.

Put bread cubes in a 9 x 13-inch casserole dish or pan that has been sprayed with pan spray.

Sprinkle sausage evenly over the bread. Mix eggs, milk, salt, pepper, and mustard. Pour over sausage in dish or pan.

Sprinkle grated cheese over top. Cover with foil and refrigerate overnight.

The next morning, bake, covered, at 350 degrees for 30 to 40 minutes. Remove foil and bake until barely set in center.

    I do this often when I have company in the house. Otherwise there is only the two of us and it is not practical. Great article.

    Mmmm... this sounds great! I love the idea of a make-ahead breakfast. It would save a lot of time and provide a tasty and filling meal, especially for overnight guests. Fantastic idea! Thanks!
