Ingredients:
1 medium egg
1 lb. green tomatoes, cut into 1/2 inch slices
1 cup of processed cornmeal
2 tablespoons Paprika
1 tablespoons minced garlic,
1 tablespoon of minced onion
1/2 tablespoon of crushed red pepper
1 tablespoon black pepper
1 tablespooon salt
1-1/2 tablespoons Parmesan Cheese, grated
Steps:
Lightly beat one egg in a mixing bowl
In separate bowl thoroughly mix cornmeal, Paprika, salt, garlic, onion, black and red pepper.
Dip tomato slices into egg and then into dry mixture, coating both sides of each tomato slice.
Place individual slices in a hot skillet with enough olice oil to cover half the tomato slice.
Cook for 5 minutes, turn and sprinkle graded parmesan chees on top and cook 5 more minutes or until brown on both sides.
Remove and drain on paper towel.
The slices may be served as an appetizer or as a sandwich.
If served as a sandwich:
Place two slices of pepper bacon for each one tomato slice in the same skillet and cook bacon until crisp.
Remove and drain bacon on paper towell.
In same skillet place two slices of French bread for each two slices of tomato and grill until brown on each side.
Lightly coat bread slices with thin coat of mayonaise
Add two grilled tomatoes and two strips of pepper bacon.
Should serve four.
