Margarita Chicken Soft Tacos

Ingredients:
2 boneless, skinless chicken breasts
1/4 cup margarita mix
1 tsp onion powder
1 tsp garlic salt (you can use a clove of minced garlic if you prefer)
1 tbsp butter
1 tsp chili powder
salt and pepper to taste
non-stick cooking spray
small flour tortillas
sharp cheddar cheese
tomatoes
avocado
lettuce
Sour Cream

Recipe
1. Cut the two chicken breasts into small, bite-sized pieces.
2. Place butter into a non-stick frying pan or wok and place chicken in on medium heat.
3. Add margarita mix, garlic salt, onion salt, chili powder, salt, and pepper. Mix well.
4. Cook the chicken in the mixture until the liquid cooks off and the chicken is cooked through.
5. Coat a small frying pan with cooking spray. Spray both sides of a soft taco sized tortilla and place it in the pan to heat. Take it out when it's golden brown and slightly toasted.
6. Dice up tomatoes, avocado, and lettuce.
7. Place chicken, cheese, sour cream, tomatoes, avocado, and lettuce in the flour tortillas and fold into tacos.

Makes 4-5 tacos.

Best served with Mexican or Spanish rice. Add Tabasco for an additional kick. You may also substitute the Margarita mix with tequila and lime for a stronger flavor.

**Also easy and delicious to make in large quantities for parties.
