Marinated Pork Chop with Veggies
large roasting pan
gallon sized bag with sealing closure
Ranch dressing-about 2 cups
2 cups water
1-2 lbs center cut pork chops, bone in
2 tbs oil
1 can broccoli & cheddar soup
1 1/2 cans milk
2 cans green beans (one drained, one with liquid)
1 can beef broth
2/3 can water
1 tbs of instant tapioca
onion powder, garlic powder, parsley flakes (to taste)
3 medium potatoes, chopped into cubes
About 4 hours beforehand, pour Ranch dressing into gallon sized sealable bag. Add pork chops, then water. Seal the bag, & make sure the pork chops are completely covered (you may need to add a bit more dressing/water). Place in fridge.
Preheat oven to 350*
Place oil in the bottom of your roaster.
In a large bowl, combine broccoli/chedder soup, milk, 1 can of green beans (liquid in), beef broth, & about 2/3 can of water. Use whisk to mix together well. Pour into your roaster pan.
Add tapioca, then second can of green beans--liquid drained. Add onion powder, garlic powder, & parsley flakes. Stir lightly.
Add potatoes, from the edges of the roaster inward. Then add pork chops, carefully.
Pour the marinade from the pork chop bag into the mixture as well, and add more parsley flakes.
Pop into the oven & bake for about 90 minutes, lid on. Check halfway through to see how it is doing, & stir slightly.
Added note:
This dish goes great with seasoned cous-cous (I used wild mushroom flavor for mine)!
