Marla's Neapolitan Cheesecake

Ingredients:

Crust

I pkg. chocolate wafers

½ cup melted butter

Filling

2 lbs cream cheese

1 cup sugar

4 eggs

Pinch salt

1 tsp vanilla

4 tbsp all-purposeflour

4 tbsp sour cream

1 tsp lemon juice

Top

1 500 ml container sour cream (also used for filling)

2 tbsp sugar

1 tsp vanilla

Red food colouring

Directions:

Crust:

Crush chocolate wafers and, using melted butter as a binder, place the mix flatly on the bottom of a round cake mould.

Filling:

Beat filling for 20 minutes. Pour over crust. Bake at 350 for 30 minutes. Turn off oven. Leave cake in oven for about 1 hour. Take out of oven for ½ hour. Reset oven to 450.

Top:

Blend rest of sour cream with 2 tbsp sugar, 1 tsp vanilla and a few drops of red food colouring. Blend at low speed. Carefully put on cake. Put cake in 450 oven for 5 minutes. Take out of oven. Leave on counter until cool. Refrigerate overnight.
