Serves 8
1/2 Cup Dry Marsala Wine
1/2 Medium Red Onion, finely chopped
1 Cup Chicken or Beef Broth
3 Tbls Frozen Concentrated Orange Juice
1/2 Cup Catsup
2 Tbls Dark Brown Sugar
2 Tbls Chili Powder
2 Tsps Yellow Mustard
1 Tsp Sea Salt
1/2 Tsp Cracked Black Pepper

Make a reduction...
Pour the wine into a saucepan over medium heat and add the onion, salt and pepper. Bring to a medium boil until reduced by half. (If you have a gas stove please note that a fortified wine like Marsala will give off vapors that are flammable when the wine is heated. Watch the pan and keep a lid handy!)

Mix the base...
In a separate container mix the catsup, mustard, and orange juice. Blend thoroughly.

Add the base to the reduction...
When the wine and onions are reduced, add the mixture and stir until mixed.

Add the flavors and reduce again...
Add the broth, chili powder, and brown sugar. Bring to a slow boil, stirring occasionally until reduced by 1/3. The sauce will darken as it reduces and you may want to add more salt and pepper to your liking.
Tip
Works well as a basting sauce for smoked meats or as a condiment on sandwiches. Can also be easily doubled or tripled as needed.
