Maryland's Crab Cake Muffins

These unusual muffins, made with canned crabmeat, have been chosen to represent Maryland in the state muffins series. They start with the Basic Muffin recipe found at: http://www.associatedcontent.com/article/1100306/basic_recipes_for_state_muffins.html?cat=2

CRAB CAKE MUFFINS

1 Recipe Basic Muffins

1 tablespoon salad oil

1 small onion, minced

Dash nutmeg

½ teaspoon paprika

½ teaspoon thyme

¼ teaspoon garlic powder

1/8 teaspoon black pepper

1/8 teaspoon ground red pepper

1 can (6 oz.) crabmeat, drained

Prepare muffin recipe as directed except decrease sugar to 1 tablespoon and increase salt to ¾ teaspoon.

In small skillet heat oil over medium heat. Add onion and sauté until translucent. Add spices and seasonings

to onion. Add to liquid ingredients along with crabmeat.

Makes 1 dozen, about 165 calories each.
