Marzetti Italian Meat and Cheese Salad

Marzetti Fat Free Italian Dressing Makes This Salad Sing!

Sandra Essary
Guys often shy away from salads. They're usually more the meat and potato types. Try this one out on your guy and see how he likes it. The men in my family do.

You can adjust the meat and cheese in the salad to suit your man's tastes. I put salami in mine, but you can add or substitute other kinds of meat such as turkey or pepperoni. Think of it as Italian antipasti with some lettuce and vegetables thrown in. It's a good way to get those veggies into the picky eaters in your family.

Marzetti Fat Free Italian Dressing puts this salad over the top. Because it's fat free, it will keep away those extra pounds and calories none of us need. Its fat free status is hardly noticeable. It's just as tasty as regular Italian dressing. The vinegar, lemon juice, garlic, spices, and a touch of sweetness will please your palate.

Marzetti Italian Meat and Cheese Salad

Romaine lettuce
Radicchio
1 carrot, grated
1-2.25 oz. can black olives, sliced
¼ to ½ red bell pepper, diced
1 zucchini, sliced
Pepperoncini (sweet Italian peppers, come in a jar) to taste
½ C fresh Parmesan cheese, grated
Genoa salami, cut into quarter slices
½ tsp garlic powder
Salt and pepper to taste
2 T Marzetti Fat Free Italian Dressing

Wash all vegetables before proceeding. In a large bowl, combine the romaine lettuce and radicchio, tearing the leaves as you add them. You can also use a pre-packaged bag of romaine and radicchio you find in your grocery's produce department. Grate one carrot and add to the mixture. Add sliced pepperoncini. Add the black olives and toss lightly.

Dice the red bell pepper into large dices, more like short slices of red bell pepper. Slice the zucchini into thin slices. Grate the Parmesan cheese. Slice the salami and cut into quarter slices. Add all of this to the salad mixture.

Add the rest of the vegetables and spices and toss lightly. Add the Marzetti Fat Free Italian Dressing and again toss lightly. Decorate the top of the salad with red bell pepper slices, salami quarters, pepperoncini, and Parmesan cheese.

Serve the salad in a large bowl, with a few tablespoons of Marzetti Fat Free Italian Dressing in a small bowl with a spoon on the side for those who want more dressing.
