Matthew Nelson's Peanut Pad Thai

Easy Thai Noodles

This recipe came from Arizona with my friend Matthew. He is inundated with requests for it from everyone who tastes it but he never measures anything. I took notes as he made it for my family. It's so good I almost hate to make the recipe public.

Soak:

1 package Rice noodles

Saute until soft:

1 large carrot julienned or sliced thin

1 large potato (white or sweet) diced or julienned

1 medium diced onion

1 small green or red pepper diced

Add and stir fry:

2 cloves fresh garlic finely chopped

½ package frozen peas

Stir in and heat to just below boiling:
(at the same time bring rice noodles to a boil, allow to soften to your tastes and then drain.)

1 tbsp yellow curry powder

1 can coconut milk

14 cup peant butter

½ tsp cayenne pepper

1 tbsp honey

3 tbsp fish sauce

Add 1/2 cup chopped fresh cilantro, pour over noodles, mix, garnish with roasted peanuts and serve to grateful guests.
