1/3 pound Lean ground beef
1/3 pound Sage Sausage
5 cups Dry Breadcrumbs
1 medium Onion
1 tbsp Pepper
1 tsp Salt
1 cup Diced Tomatoes, drained
2 large Eggs
2 large potatoes
1 cup Sharp Cheddar Cheese

Making the Meat Cupcakes
Preheat the oven to 350 degrees.2
Crush the dry bread crumbs, and then mix the lean ground beef, sage sausage and dry breadcrumbs together in a large plastic or glass mixing bowl.3
Chop the onion into small pieces, then add to the meat mixture with the pepper, salt and diced tomatoes. Crack the eggs and mix them into the meat cupcake mixture. You're going to have to do this with your hands. Sure, it's a little gross, but the final product is worth it.4
When the meat mixture has been firmly packed through mixing it with your hands, Get out your cupcake pan. You won't need to use grease. The sausage will do just fine, believe me.5
Form the meat cupcakes with your hands, rolling the meat mixture in a ball that is just slightly larger than the size of the cupcake pan. Place the balls into the pan, then bake the meat cupcakes for between 20-30 minutes. Because there's sausage in the recipe, its important to ensure that the cupcakes reach the right temperature. Use a meat thermometer to ensure that they reach at least 165 degrees.6
Making the Whipped Potato Frosting
Skin and cut the potatoes into 1/2-inch pieces, and then boil them in a medium saucepan with 1 tsp salt until they're ready to be mashed.7
Drain the potatoes, add approximately 1/2 cup of milk and the butter, and then whip them with an electric mixer until light and fluffy. While they're still hot, add the cheddar cheese and 1 tsp. of pepper, then continue to whip until the potatoes and cheese have been completely mixed. If you like cheesier potatoes, go ahead and add some more cheese. It isn't going to hurt the recipe.8
Fill a cake decorator's piping bag with the potatoes, and then remove the meat cupcakes from the oven at the end of their cooking time. Add the potatoes to the tops of the cupcakes just as you would a cake cupcake, using whatever style you wish.9
Place the cupcakes back into the oven for approximately 5 minutes, or until the potatoes have browned up slightly. Remove them from the oven, and serve with a healthy dose of humor as your kids realize that they aren't getting chocolate cupcakes for dinner like they thought!Tip
At 165 degrees, the pork sausage will be fully cooked, and the beef will be at approximately medium-well. If you prefer well-done beef, increase the cooking time until the meat cupcakes reach an internal temperature of at least 180 degrees. Remember, though, that they will continue to cook for a few minutes after they have been removed from the oven.
