Memorial Day Menu Ideas - Red, White and Blue

Memorial Day is traditionally the opening day of the barbeque season. So naturally, when you think of meal items for Memorial Day, you think of breaking out the barbeque grill. But this year you are trying to stay fit and eat healthy, so what can you make that is healthy and won't take you away from the festivities?

Low Carb, Low Fat, LowCal, and Very Easy

Red:

A favorite is Teriyaki Marinated "Civilized" Chicken.

Serves 4

The night before you plan to cook the chicken, take about 3 pounds of chicken breast tenderloins and sprinkle them with garlic powder. Then pour teriyaki sauce on each piece. Leave the tenderloins in a bowl, covered in the refrigerator over night.

About five minutes before you want to cook the chicken, remove it from the refrigerator and skewer the tenderloins each with a bamboo skewer.

Place the chicken on a hot grill and cook them until they are done.

Place the cooked chicken on a Red Plate.

White:

Another great dish is Barbequed Salmon.

Take a medium sized salmon filet and sprinkle it with Cajun Spice and lemon. Place it skin side down on a hot grill and cook it until the meat flakes easily.

Remove the fish from the grill and place it on a White Platter. Serve with a Blue Serving Fork.

Blue:

Green salad is always a crowd pleaser at a barbeque.

1 head of Iceberg lettuce, torn into bite size pieces

2 red tomatoes, diced

2 avocados, diced

1 bunch of green onions, diced

1 cup shredded Colby-Jack cheese

Place all of the ingredients into a large Blue Bowl and toss. Set out favorite salad dressings so everyone can dress their own salad.

Serve with Red and White salad tongs.

Red:

Open a can of black beans, any style, and place them in a Red Saucepan. Then heat them on the grill along with the fish and chicken. Remove from the heat and place on the table on a Red, White and Blue Hot Pad.

Serve with a big White Spoon.

White and Blue:

Prepare sugar-free gelatin in blueberry flavor. Serve it in individual White Dessert Bowls. Top with non-dairy whipped topping.

To drink:

Serve Iced Tea in Red, White and Blue Glasses.

Add to your Memorial Day fun by placing all of these items on a large table and serving buffet style.
