Quick and Easy Meal

Barbecue Chicken - Oven Baked

* 3 lbs chicken (breast, drumstick, wings), skin and fat removed
* 1 onion, thinly sliced
* 3 tbsp vinegar
* 3 tbsp Worcestershire sauce
* 2 tbsp brown sugar or to taste
* Black pepper to taste
* 1 tbsp chili powder
* 1 tbsp. hot pepper flakes
* 1 c. chicken broth

Place chicken in a 13 x 9 inch pan, layering the chicken out evenly. Arrange onions over the top. Mix the vinegar, Worcestershire sauce, brown sugar, pepper, hot pepper flakes, chili powder, and broth together. Pour the mixture over the chicken, and bake at 350 for 1 hour or until done.

Potato Salad

* 3 lbs. potatoes, washed and peeled
* 5 boiled, hard cooked eggs
* 1/4 c. red onion, chopped
* 1/4 c. celery, chopped
* 3/4 c. mayonnaise
* 2 tbsp prepared mustard
* Salt and pepper to taste

In a pot, cooked the potatoes until they are tender. Cool and then cube them.
Boil eggs, let them cool, and then peel the shell off, and chop them.
Chop the onion using more or less than indicated.
Pull the strings off the celery, and chop enough to equal the amont needed.
Combine potatoes, eggs, onions, and celery.
Stir in the mayonnaise, mustard, salt and pepper..
Add the mustard.
Stir well. Taste to see if you need to add more mayonnaise or mustard.
