Mermorial Day Recipes Have International Flavor

Memorial Day is the unoffical start of summer. Therfore, this holiday must have some cool recipes to get it started. Salads and recipes with fruit are delicious recipes for Memorial Day. Italian rice sallad is popular in Italy and barbequed bananas come from Australia. In other words, Memorial Day recipes have international flavor. Moreover, I have made both of these recipes and I would recommend them for Memorial Day.

Italian Rice Salad
8 cups cooked long grain rice
2 cups frozen peas, thawed
2 cups frozen corn, thawed
1/2 cup black olives, pitted
6 oz can Albacore tuna packed in water
1 cup hard boiled eggs, peeled and chopped
4 tablespoons extra virgin olive oil
2 tablespoons Italian parsley, finely choppped
Salt and pepper to taste

Preparation
Combine all of the ingredients together in a large mixing bowl. Season with salt and pepper to taste. Place in the refrigerator for 1-2 hours.

To Complete
Remove from the refrigerator, mix throughly, and serve within 30 minutes. This Memorial Day recipe serves 10 people.

Bananas on the Barbie
4 firm-ripe bananas
2 tablespoons lemon juice
1 tablespoon honey
Pam or other spray

Preparation
Peel bananas and cut them lengthwise. Place in baking dish and spray lightly with Pam or other cooking spray. In a small bowl, combine honey and lemon juice and set aside.

To Complete
Preheat grill. When grill is 350 degrees F, place bananas cut side down on the grill. Grill for 2 minutes. Brush round side of the bananas with half of the lemon-honey sauce and turn over onto grill. Cook for an additional 2 minutes. Remove from grill, brush with remaining lemon-honey mixture and serve immediately. This Memorial Day recipe serves eight people.
