Mexican Breakfast Burritos

These Are Perfect for Cinco De Mayo If You Celebrate the Holiday

This is one of those foods that I love to make. It tastes good and is quick to make. In addition to that it is highly portable depending on how you make it. It is really simple to make and you can find the ingredients almost anyplace you buy groceries.

Things you will need for four people.

1 package of fajita or burrito shells (typically you can find a 10-12 pack)

1 onion diced

1 bell pepper diced

6 beaten eggs that will become scrambled

At least one pound of sausage (you can substitute other breakfast meats if you like)

1 package of taco seasoning mix.

Shredded mozzarella and cheddar cheese blend.

1 jar of salsa

The first thing you want to do is to cook the sausage in a large skillet, you typically will cook it for at least seven minutes and I always try to chop it up reasonably fine like you would see in tacos. Once it is cooked you want to mix in the half a package of the taco seasoning and prepare according to package on seasoning. I use half the package to keep the spices in check for breakfast. If you want you can use the entire package. After you have the sausage drained of the excess grease you want to add in the bell peppers and onions and continue to stir. After about three minutes you will add the eggs in and scramble them into the mixture. You now have your mix ready. You will spoon this into the shells you use, top with salsa and cheese and roll up. When I make these I have also made the beef separate and eggs separate in different pans and then combined once the eggs are scrambled.

These can be pre-made and frozen for later use, or you could make the mix up and make them later. I often make up extra so I can have a nice fast breakfast when I am on the run.
