Mexican Breakfast Quesadillas

Cereal gets a little tired every morning for breakfast. Indulge once in a while in something rich and tasty to kick start your morning. Used with permission from Johnny Sanchinelli's Culinary Creations. Serves 3.

Ingredients:
* 6 corn tortillas

* 1 package of Oaxaca cheese, shredded

* 2 chorizo sausages, cooked according to package directions and allowed to cool
* 1 egg

* salsa verde and sour cream to garnish on the side

* vegetable oil for frying

Directions:

Wrap the tortillas in a clean dry kitchen towel, and warm in the microwave for 15-20 seconds to make them easier to handle. Fill each tortilla with Oaxaca cheese and chorizo and fold over. Once all of them are prepped, in a warm dry pan or griddle heat the quesadillas until cheese is melted. Put aside the quesadillas. In the same pan, heat up the frying oil. Beat the egg until soft peaks begin to form. Dip each quesadilla in the egg batter and drop into the frying oil, until it's crispy and golden. Flip it and fry it until it's golden brown all around. Plate by serving with salsa verde and sour cream on the side. Devour!
