Mexican Dessert Recipes: Heavenly Fried Ice Cream

I love Mexican food! I love to cook it and I love to eat it! Mexican dessert recipes are no different than the scrumptious, flavorful entrees found south of the border. Sopapillas are a personal favorite, especially dipped in warm caramel, but fried ice cream is the most fun to make at home and is a wonderful finish to almost any meal - your dinner guests will be amazed!

It is best to prepare these the day before in the freezer or multiply the recipe and keep plenty on hand for anytime you need a gourmet dessert fast!

First, combine 1 cup of finely crushed cornflakes with 1/2 cupof sugar and a teaspoon of cinnamon. Scoop an average sized ball of vanilla ice cream from a container, a quart of ice cream will be plenty for 6 servings. Roll the scoop of ice cream in the coating mixture and firmly press the ingredients into the ball. Wrap the coated ice cream in wax paper and return it to the freezer. Repeat this until you have the desired number of scoops and let them harden for 4 to 5 hours.

When you're ready to serve, heat oil in a deep pan or fryer to 450° and fry the ice cream ball for about half a minute. Place the scoop in a bowl, drizzle a teaspoon of honey over the top, add whipped cream, a cherry, and enjoy!
