Mexican Food Recipe: Easy Beef Burritos

It is hard to find good Mexican food recipes that I can make here in my small town. Many Mexican food recipes call for ingredients I've never heard of or my little grocery store doesn't carry.

My mother-in-law was visiting from Arizona one summer, and she came up with this adaptation to her famous beef burritos using what ingredients she could find at my local grocery store. If you have access to fresh ingredients, please use those instead of the canned. Fresh always tastes better!

This is a great Mexican food recipe the whole family will enjoy, and it's so easy you will be making it over and over again!

Ingredients:

1 lb. ground beef

1 14oz. can diced tomatoes (or 3 medium tomatoes)

1 small can diced green chilis

1 can chopped black olives

1 medium onion, chopped

2 cloves garlic

1 can refried beans

1/4 cup salsa

shredded cheddar cheese

sour cream

10 inch round flour tortillas

Brown the ground beef in a big electric frying pan. Add the onion and garlic and cook until the onion is translucent. Stir in the tomatoes and the green chilis. Spoon out the refried beans using a rubber spatula and stir in well. Be patient; the refried beans are hard to stir in at first, but once they melt a little, it's much easier. Stir in the black olives and salsa.

Cover and simmer for 15 minutes.

To serve, place some shredded cheese on the tortilla, spoon on the burrito mixture, top with a little more shredded cheese and then roll or fold the tortilla. Top with sour cream and more salsa.

Alternative option: Make enchiladas using this same recipe! Place the prepared burritos in a baking dish. Pour one can of enchilada sauce over the burritos and top with a bit of cheese. Heat in the oven until the sauce is warm and the cheese is melted.

The word 'burrito' literally translates to "little donkey" in Spanish. The term possibly derives from the appearance of the rolled up tortilla, which is said to resemble the bedrolls and packs donkeys carried.

    I love burritos! I live in Thailand and up until recently it was difficult to get a lot of the ingredients - not now though as there have been so many supermarkets selling Western products open up.
