Serves 4
1 lb. 1 lb. hamburger
1 envelope 1 envelope taco seasoning
1 10 or 12 oz. can 1 can diced tomatoes
1 pkg. 1 package Spanish Ricd-a-Roni
1 10 oz jar 1 jar chunky salsa
from 1 10 slice pkg. 3 or 4 soft tortilla shells
1 and 1/2 cups 1 1/2 cups shredded cheddar cheese
2 cups water as required per package instructions
Directions for Mexican Lasagna

Prepare Rice-a-Roni according to directions,2
Adding the can of diced tomatoes
Add the can of diced tomatoes, undrained.3
Brown the hamburger in a frying pan until thoroughly cooked4
Stir in contents of Taco seasoning envelop and water called for on envelope. Continue to stir from time to time on low heat until liquid is nearly al absorbed.5
Place a tortilla shell in sprayed casserole dish.6
Spread half of the seasoned hamburger over the shell.7
Cover meat with a layer of Spanish Rice8
Cover meat with a layer of Spanish Rice. (A little more than a third of the rice)9
Top rice layer with shredded cheddar cheese.10
Repeat steps 1 thru 9.11
Top with another tortilla shell.12
Spread remaining rice over tortilla shell.13
Cover rice with a layer of salsa.14
Cover completely with Shredded Cheddar Cheese.15
Place casserole dish on a non-stick aluminum foil covered cookie sheet to prevent drip over from reaching bottom of oven.16
Place in oven and bake at 375 degrees for 30 minutes.17
Cut into four pieces and serve with sour cream and a salad. Enjoy!Tip
