Ingredients Needed:
4 Large flour tortillas
2 cups shredded Monterey-Jack cheese or Cheddar cheese
1 cup chopped onions
1 cup chopped green and red bell pepper
2 tbsp extra virgin olive oil
salt and pepper to taste
Optional Ingredients:
Sour Cream
Guacamole

Making the filling: Heat 1 tbsp. olive oil in a skillet. Add chopped onion and pepper and saute them for 5-6 mins. on a medium flame. Add salt and pepper to taste and mix them. Set aside.
Assembling the quesadilla: While the quesadilla is assembled, heat a skillet over medium heat.
Method 1:
Place a flour tortilla on a flat surface and spread 1/2 cup shredded cheese all over the tortilla. Then spread 1/2 of the onion-pepper mixture. Scatter another 1/2 cup of cheese over the onion-pepper mixture. Place a tortilla over it and press slightly.
Put 1/2 tbsp of olive oil over the heated skillet and place the assembled quesadilla carefully over the heated skillet. Toast the quesadilla on both sides till the cheese is completely melted and the tortilla is slightly brown.
Method 2:
Another way to assemble is to place a tortilla on a flat surface and cover half of it with 1/4 cup of cheese, followed by 1/4 of the onion-pepper prepared mixture and cover the onion-pepper misture with another 1/4 cup of cheese. Fold the tortilla in half.
Put 1/4 tbsp of olive oil over the heated skillet and place the assembled quesadilla carefully over the heated skillet. Toast the quesadilla on both sides till the cheese is completely melted and the tortilla is slightly brown.
Once the cheese is melted and the tortilla is slightly brown, remove it from heat and cut the quesadillas into wedges with a knife or pizza cutter.
Serve them with guacamole and sour cream or a dipping of your choice.
Enjoy hot, mouth-watering quesadillas.
